This Roasted Brussels Sprouts Salad with Maple Balsamic Dijon Dressing is the perfect balance of savory, sweet, and tangy flavors. INGREDIENTS
◦ 5 cups brussels sprouts, grossly chopped
◦ 2 tbsp nutritionnal yeast
◦ 1/2 tsp garlic powder
◦ 2 tsp dried parlsey
◦ 2 tsp dried oregano
◦ 1/2 tsp paprika
◦ 1 tbsp avocado oil
◦ 1/4 medium red onion, sliced
◦ 1/4 cup sliced almonds
◦ 1/4 cup pomegranate seeds
Maple Balsamic Dijon Dressing
◦ 3 tbsp extra virgin olive oil
◦ 1 tbsp dijon mustard
◦ 1/2 tbsp old style dijon mustard (wholegrain)
◦ 1 tbsp maple syrup
◦ 1 tbsp balsamic vinegar
◦ 1 tbsp lemon juice
◦ 1/2 tsp dried thyme
◦ 1/4 tsp salt
◦ 1/8 tsp black pepper
INSTRUCTIONS
1. Preheat the oven to 400F.
2. On a large baking tray, add the brussels sprouts, the oil and the seasonnings. Mix until everything is well coated and bake in the oven for about 30 minutes.
3. In a small jar, add the ingredients for the dressing and mix with a spoon or a whisk until well combined.
4. In a large bowl, add the roasted brussels sprouts, top with the onions, sliced almonds, pomegranate seeds and the dressing. Mix well with a spoon to combine.
