Creamy Protein Mushroom Pasta

Craving a hearty yet healthy meal? Look no further than this creamy protein-packed mushroom pasta! With rich, earthy mushrooms and a velvety, protein-boosted sauce, this dish brings comfort and nourishment to your plate.

 
 

🍽 Servings: 2 🕓 Prep Time: 5 mins 🕓 Cook Time: 15 mins

 

INGREDIENTS

◦ 170g whole wheat pasta of choice, dry

◦ 1 tsp avocado oil
◦ 1 small onion, chopped
◦ 1 tbsp minced garlic
◦ 3 cups white mushrooms, chopped

◦ 300g silken tofu
◦ 1/4 cup nutritionnal yeast
◦ 1 tsp miso paste
◦ 1 tsp dried parlsey
◦ 1/2 tsp dried basil
◦ Salt and black pepper to taste

INSTRUCTIONS

1. In a medium pot, boil some water, then add the pasta and cook according to the instructions on the box.

2. In a pan on medium heat, add the oil, the onion and the garlic. Cook for a couple of minutes until golden.

3. Add the mushrooms and cook for another 3-5 minutes. Keep 1/2 cup of the cooked mushrooms aside.

4. In a blender, add the rest of the cooked mushrooms, silken tofu, nutritionnal yeast and spices, and blend until smooth.

5. Drain the pasta once it’s cooked, then add it to the pan along with the mushroom sauce and the cooked mushrooms. Let simmer on medium heat for a couple of minutes.

6. Divide into 2 servings, top with extra nutritionnal yeast (optional).
