This vibrant and nutritious Colorful Protein Pasta Salad is the perfect dish to fuel your day with a mix of fresh veggies, hearty pasta, and a boost of protein. INGREDIENTS

◦ 4 cups cooked pasta of choice
◦ 1 bloc smoked tofu, chopped into cubes
◦ 2 mini cucumbers, chopped
◦ 2 celery stalks, chopped
◦ 1 cup cherry tomatoes, chopped
◦ 1/2 cup pitted green olives, chopped
◦ 1/2 cup hemp seeds
◦ 1/4 cup fresh parsley, chopped
◦ 2-3 tbsp fresh basil, chopped

Baslamic Vinaigrette
◦ 1/2 cup extra virgin olive oil
◦ 2 tbsp baslamic vinegar
◦ Juice 1/2 lemon
◦ 1 tbsp dijon mustard
◦ 1 tsp dried oregano
◦ 1/2 tsp garlic powder
◦ 1/2 tsp salt
◦ 1/4 tsp black pepper

INSTRUCTIONS

1. In a small jar, add the ingredients for the vinaigrette and mix until combined. Set aside.

2. In a large salad bowl, add all the ingredients. Top with the vinaigrette and mix with wooden spoon to combine everything.

3. Divide into 4 servings.

Refrigerate up to 4-5 days.
