INGREDIENTS

Salad
◦ 6 cups whole wheat pasta, cooked
◦ 3 cups edamame, cooked
◦ 2 cups arugula, roughly chopped
◦ 2 mini cucumbers, chopped
◦ 3 celery stalks, chopped
◦ 1 cup tomatoes, chopped
◦ 1 medium apple, chopped
◦ 1/2 medium red onion, thinely sliced
◦ 1/2 cup fresh parsley, finely chopped
◦ 1/4 cup fresh basil, finely chopped
◦ 1/4 cup olives, pitted and chopped

Protein Avocado Dressing
◦ 1 bloc firm silken tofu
◦ 1 avocado
◦ Juice 1 lemon
◦ 1/4 cup water
◦ 1/2 tbsp dijon mustard
◦ 1 tsp dried oregano
◦ 1/2 tsp garlic powder
◦ 1/2 tsp salt
◦ 1/4 tsp black pepper

INSTRUCTIONS

1. In a blender, add the ingredients for the avocado dressing and blend until smooth. Set aside.

2. In a large salad bowl, add all the ingredients for the salad.

3. Divide into 5 servings. Once ready to serve, top with the creamy dressing.

Refrigerate up to 4 days.
